The Asian Style Tofu Rice Bowl takes very minimal work and just a handful of ingredients to make it too!

Its just Day 11, is it?  Its seems like a lot longer, day flow into each other, I don’t remember weather Its Sunday or Monday anymore. The air is cleaner, the stars in the night brighter. I cook, I blog, I rest and catch up with the people I love. Life has taken on a very lazy phase. Sometimes I feel guilty for not have accomplished much in the day. But if there is one thing, this not so natural calamity has taught me is not to be too hard on one’s self.

Life had truly become a rat race for everyone, we wanted more of every thing, more success, more money , more followers, more likes, more recipes, more exercise  more and more. Yet we got less in return, less time with the ones we love, less rest, less contentment less!!

Will life change post Convid 19? I don’t know, but I do know while I enjoying the pace, our economy suffers, people suffer and I miss the ones I love the most. Some like my brother and bhabi are stuck alone cleaning, cooking, working from home. At times they have no energy or the time to cook elaborate meals and want some fun 1 bowl meals.

So here it is an easy Asian Style Tofu Rice Bow! This is best Rice bowl you will make at home. The Rice bowl is a healthy weeknight meal that doesn’t take a lot of effort to make, but tastes absolutely delicious!yl

The Asian Style Tofu Rice Bowl  it takes very minimal work and just a handful of ingredients to make it too! Use whatever  veggies and sauces you have at hand, Be creative and enjoy

Asian Style Tofu Rice Bowl

Ingredients

200 gms Tofu or Paneer cubed

 3 tbsp soy sauce

3 spring  onions chopped with greens

½ each  Red and yellow bell pepper chopped ( optional)

4-5 Mushrooms Chopped

Few leaves greens like baby spinach

2 thsp chinese red chilli sauce or any other sauce (teriyaki etc)

1 thsp garlic paste

2  tsp cornflour

 2 cups cooked rice

White pepper or normal pepper

Oil for cooking

 For the Marinating

1 thsp soy sauce

½ thsp chilli sauce

2 thsp  cornflour

Method

  1. Put the cubed tofu in a bowl and a bowl and the 1 thsp of soy sauce and ½ thsp of chili sauce and toss to coat the cubes
  2. After 2 mins sprinkle with cornflour and toss again to coat evenly
  3.  Heat 2 tablespoons of oil in a pan. Shake of the extra conflour  and shallow fry the Tofu till crisp, turning  the cubes to ensure it s cooked from all sides
  4. In the  same pan add 1 thsp oil and heat. Now add the garlic paste and cook.
  5. Add the spring onion and cook for 30 secs. NExt Add the bell peppers, mushroom and nay other vegetables like  greens, carrot , beans etc at this stage if using and cook till done. Sprinkle with very little salt and pepper.
  6. Make a slurry of the of 1 tsp cornflour with  3 thsp water, Add to the cooking vegetables,
  7. Add the sauces – soy and chilly. Now add the cooked rice and toss till its evenly coated.
  8. Serve in 4 bowls and top with the tofu or paneer
  9. Sprinkle with chopped greens of spring onions and serve hot
