Most of us in Delhi are well into the second week of the Lockdown, while the rest  of the nation begins week 2 today. As days flow into each other we have lost track of weekends and weekdays, the sky is bluer , air clearer and t sound of birds , OH! That orchestra I wake up to everyday is a God’s Own Miracle !

However, on the flip side, the the lack of exercise  has lead to smaller appetite and I have a  not been able to eat as much. A bunch of bananas my mom bought last week are now well past their prime and so I decided to bake a beautiful but easy  Eggless Banana Cake today.!

 Easy Eggless Banana Cake Recipe

Makes one 6”

Flour    155gms

Corn flour  2thsps

Baking powder   11/4 tsp

Baking soda    :   1/2 tsp

Sugar ( brown ): 200gms

Banana: 350 gms

  Oil    :     100 ml up

 cinnamon  :  1 tsp

Nutella /walnuts/ Chocolate Chips

Method:

  1. Preheat oven to 180 C/ 350 F. Grease a 6” round pan and keep aside.
    2. Mash your bananas roughly.
    3. Add the brown sugar to the bowl containing the mashed bananas and beat really well using a hand blender.
    4. Add the oil and vanilla essence and beat until incorporated.
    5. Mix the dry ingredients in another vessel.
    6. Add the dry ingredients to the wet in 3 additions and beat at low speed until they are jus mixed.
    7. Fold the choco chips into the batter and bake at 180C until a tooth pick inserted comes out clean.
