Pear and Apple salad recipe

Come august and Delhi gets flooded both with rain water from short spells of rain we receive and Pears. Pears have by far been my favorite fruit since childhood. I remember eating them right out of the grocer s bag without washing with its juice dripping down my chin.

One such rainy evening when distance relatives came visiting with a basket full of fresh pears from their very own gardens, I was transported back to those innocent days. But there are only so many
pears a person can eat and so as to not waste this “gift of the gods” as referred to by the Greeks. I decided to use them to test some new recipes.

Being a baker I decided to forgo the obvious choice of a tart, cakes and other such desserts and decided to try my hand and some so called healthy recipes. I added them to this fantastically fall flavored salad!

This autumn pear and apple salad came out delicious and filling enough to make a light dinner or satisfying lunch. Being a vegetarian I adapted the recipe to exclude bacon and added some bread crumbs toasted in butter and tossed in smoked paprika for the same crispy texture and Smokey taste.

Poaching the Pears

Ingredients

Ingredients

For the Salad

  • 2 cups mixed greens ( I used Arugula or rocket leaves and iceburg lettuce)
  • 1 large pear  peeled and quartered
  •  ½ pear thinly sliced
  • 1 small apple peeled and thinly slice
  •  1/3  cup feta cheese  or goat cheese
  •  2 table spoons pine nuts
  •   2 tablespoons dried cranberries

For the poaching the pears

  •   1-2 cups red wine to poach the pear ( used shiraz)
  •   1 tsp of sugar
  •   1 small piece of cinnamon

For the Bread Crumbs

  • 2 sliced of brown or white bread sides remove
  • 1-2 tablespoon Butter
  • 1 tsp smoked paprika

For the Dressing

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons of the reserved liquid from the poached pears
  • 1 tablespoon extravirgin olive oil
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • 1 -2 cloves of garlic minced
  • Salt and pepper to taste

Method

For poaching the pears

  1. Put the quartered pear in the large saucepan. Add enough wine to cover the pears.
  2. Add all other ingredients
  3. Bring to boil , cover and simmer till the pears are poached and tender.
  4.  Remove from heat. Reserve the liquid for the  dressing
  5. Cool pears and slice thinly

For the Dressing

  1. Put all the ingredients in the wide mouthed mason jar
  2. Shake vigorously till all ingredients are mixed
  3. Remove garlic before adding to salad

For the Bread Crumbs

  1. Cut the bread into small pieces
  2. In non stick pan fry with butter till crisp
  3. Add salt to taste and smoked paprika toss well

Assemble the salad

  1.  Clean and wash the greens and distribute at the bottom of a salad bowl
  2.  Add the poached pear slices, pear slices and he apple slices on top.
  3.  Dot with goat cheese using a piping bag
  4.  Sprinkle the pine nuts and the cranberries
  5. Chill for atleast 30 mins
  6. 15 minutes before serving add the dressing.
  7. Top with the crisp bread crumbs.
Salad with Spinach Ricotta Tarts
Serve with garlic bread  or   Enjoy just as it is ☺
